The ultimate healing soup — a rich, golden broth packed with tender chicken, noodles, carrots, and celery. Made entirely from scratch with no dairy, no mammalian products, and nothing artificial.
What You Need
- 1 lb boneless chicken breast or thighs
- 6 cups chicken broth
- 2 cups egg noodles or gluten-free noodles
- 3 medium carrots, sliced
- 3 stalks celery, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped, to serve
Method
- Heat olive oil in a large pot over medium heat. Cook onion, carrots, and celery 5–6 minutes until softened.
- Add garlic, thyme, and bay leaves; cook 1 minute.
- Add chicken broth and chicken. Bring to a boil, then reduce heat and simmer 20 minutes.
- Remove chicken; shred with two forks.
- Add noodles to the simmering broth; cook according to packet time.
- Return shredded chicken to the pot. Remove bay leaves, season with salt and pepper.
- Serve hot, topped with fresh parsley.
Tips & Notes
- For extra-rich broth, use chicken thighs instead of breasts — more collagen, more flavour.
- Add the noodles just before serving if making ahead so they do not absorb all the broth.
