Flaky cod fillets seared in olive oil with a golden crust of garlic, herbs, and breadcrumbs. A light, elegant dinner that comes together in under 20 minutes and is completely mammalian-free.
What You Need
- 4 cod fillets (about 6 oz each)
- 3 tablespoons olive oil, divided
- 3 cloves garlic, minced
- ¼ cup panko breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
- Juice of ½ lemon
- Salt and pepper to taste
Method
- Mix panko, garlic, parsley, lemon zest, 1 tablespoon olive oil, salt, and pepper in a small bowl.
- Pat cod fillets dry and season with salt and pepper.
- Heat remaining 2 tablespoons olive oil in a skillet over medium-high heat.
- Place fillets in skillet; press herb mixture gently onto the tops.
- Cook 3–4 minutes without moving, then carefully flip and cook another 2–3 minutes until fish flakes easily.
- Squeeze lemon juice over the top and serve immediately.
Tips & Notes
- Patting the fish completely dry is the secret to a proper sear — moisture = steaming, not searing.
- Cod is done when it turns from translucent to opaque all the way through and flakes with gentle pressure.
