A hearty one-pan meal of ground turkey, sweet potatoes, black beans, and warming spices. Naturally dairy-free and packed with protein and fibre — a perfect weeknight staple for Alpha-Gal households.
What You Need
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced small
- 1 can (15 oz) black beans, drained and rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro or parsley, to serve
Method
- Heat olive oil in a large skillet over medium heat. Add onion and cook 3–4 minutes until softened.
- Add garlic and cook 30 seconds more.
- Add ground turkey; break apart and cook until browned, about 6 minutes.
- Add sweet potato, cumin, paprika, chili powder, salt, and pepper. Stir to coat.
- Add a splash of water or broth (about ¼ cup), cover, and cook 10–12 minutes, stirring occasionally, until sweet potatoes are tender.
- Stir in black beans, heat through, and serve topped with cilantro.
Tips & Notes
- Cut sweet potatoes into small, even pieces so they cook at the same rate as the turkey.
- Leftovers reheat beautifully — make a double batch for easy meal prep.
