Juicy bone-in chicken thighs marinated in lemon, fresh herbs, and olive oil then roasted until golden and crispy-skinned. A simple, satisfying weeknight dinner that is completely free of mammalian meat and dairy.
What You Need
- 4 bone-in, skin-on chicken thighs
- Juice and zest of 1 lemon
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon dried oregano
- Salt and pepper to taste
Method
- Mix lemon juice, zest, olive oil, garlic, rosemary, thyme, oregano, salt, and pepper in a bowl.
- Add chicken thighs, coat thoroughly, and marinate for at least 30 minutes at room temperature.
- Preheat oven to 425°F. Arrange thighs skin-side up in an oven-safe dish.
- Roast for 35–40 minutes until skin is golden and internal temperature reaches 165°F.
- Rest 5 minutes before serving.
Tips & Notes
- Pat the skin dry before marinating for extra crispy skin.
- Bone-in thighs stay much juicier than boneless — worth the extra cook time.
