A traditional Asian preparation of bitter melon stir-fried with eggs and garlic, mellowing its sharp bitterness into a savory, satisfying dish. Bitter melon contains compounds that have been studied for their blood-sugar-lowering effects, making this a functional companion to the bitter melon tea in this collection.
What You Need
- 2 bitter melons, halved, seeded, and thinly sliced
- 1 teaspoon salt (for degorging)
- 3 eggs, lightly beaten
- 2 tablespoons vegetable or avocado oil, divided
- 3 cloves garlic, minced
- 1 tablespoon low-sodium soy sauce
- Salt and pepper, to taste
Method
- Toss the sliced bitter melon with 1 teaspoon salt and let sit for 15 minutes to draw out some of the bitterness, then rinse and pat dry.
- Heat 1 tablespoon oil in a skillet over medium heat. Pour in the eggs and scramble until just set, then remove and set aside.
- Add the remaining oil to the pan. Add the garlic and cook 30 seconds.
- Add the bitter melon and stir-fry for 5–6 minutes, until tender but still slightly crisp.
- Return the scrambled eggs to the pan, add the soy sauce, and toss gently to combine.
- Season with salt and pepper to taste and serve warm.
Tips & Notes
- Salting and rinsing the bitter melon before cooking is the key step for taming its bitterness — do not skip it.
- Choose bitter melons with lighter green, more ridged skin for a slightly milder flavor.
- As with the bitter melon tea, talk to a doctor before regularly eating bitter melon alongside diabetes medication, as it can significantly affect blood sugar.
