Savory, Asian-inspired ground turkey filling wrapped in crisp lettuce leaves instead of tortillas or bread — a satisfying, low-carb way to enjoy big flavor without the blood sugar spike.
What You Need
- 1 pound ground turkey
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1 small onion, diced
- 1 cup shredded carrots
- 1 can (8 oz) water chestnuts, drained and chopped
- 3 tablespoons low-sodium soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 teaspoon chili garlic sauce (optional)
- 1 head butter or iceberg lettuce, leaves separated
- Green onions, sliced, for garnish
Method
- Heat the sesame oil in a large skillet over medium heat. Add the onion and cook 3–4 minutes until softened.
- Add the garlic and ginger and cook 30 seconds until fragrant.
- Add the ground turkey and cook, breaking it up, until browned and cooked through.
- Stir in the carrots, water chestnuts, soy sauce, rice vinegar, and chili garlic sauce. Cook 3–4 minutes more.
- Spoon the warm turkey mixture into lettuce leaves and top with green onions before serving.
Tips & Notes
- Water chestnuts add a satisfying crunch that mimics the texture of rice without the carbs.
- Chill the lettuce leaves in ice water for a few minutes beforehand for extra crispness.
- Serve with a side of extra soy sauce or a peanut-free almond butter dipping sauce.
