Flaky baked cod and roasted asparagus finished with garlic butter, all cooked on one pan. A light, lean dinner that pairs well with any low-carb side.
What You Need
- 4 cod fillets (about 6 ounces each)
- 1 bunch asparagus, trimmed
- 3 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Method
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Toss the asparagus with olive oil, salt, and pepper, and spread on one side of the baking sheet.
- Place the cod fillets on the other side of the sheet and pat dry.
- Whisk together the melted butter, garlic, lemon juice, and lemon zest, then spoon over the cod.
- Season everything with salt and pepper.
- Bake for 12–15 minutes, until the cod flakes easily and the asparagus is tender-crisp.
- Garnish with fresh parsley and serve.
Tips & Notes
- Choose asparagus spears of similar thickness so they cook evenly.
- Cod cooks quickly and dries out easily — check for doneness starting at 10 minutes.
- Any firm white fish, like haddock or halibut, works as a substitute.
