A simple, oven-baked salmon fillet brightened with lemon and fresh herbs. Salmon is rich in omega-3 fatty acids, which support heart health — a key concern for anyone managing blood sugar.
What You Need
- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, half juiced and half sliced
- 1 tablespoon fresh chopped dill (or 1 teaspoon dried)
- 1 tablespoon fresh chopped parsley
- Salt and pepper, to taste
Method
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and pat dry.
- Whisk together the olive oil, garlic, and lemon juice, then brush over the salmon.
- Season with salt, pepper, dill, and parsley, and top each fillet with a lemon slice.
- Bake for 12–15 minutes, until the salmon flakes easily with a fork.
- Serve immediately with any pan juices spooned over the top.
Tips & Notes
- Salmon is done at an internal temperature of 145°F — avoid overbaking, which dries it out.
- Pair with roasted non-starchy vegetables like asparagus or broccoli for a complete, blood-sugar-friendly plate.
- Wild-caught salmon has a slightly firmer texture and richer flavor than farmed, if available.
