Salmon fillets with a golden, crispy skin and a bright, herb-forward pan sauce made with olive oil, capers, lemon, and fresh dill. Entirely Alpha-Gal safe, ready in 20 minutes, and elegant enough for company.
What You Need
- 4 salmon fillets, skin-on (6 oz each)
- 1 tsp coarse salt and ½ tsp black pepper
- 2 tbsp olive oil
- For the sauce:
- 3 tbsp olive oil
- 3 garlic cloves, thinly sliced
- 2 tbsp capers, drained
- Juice and zest of 1 lemon
- 2 tbsp fresh dill or flat-leaf parsley, chopped
- Pinch of chili flakes (optional)
Method
- Pat salmon fillets completely dry. Season skin side and flesh side with salt and pepper.
- Heat 2 tbsp olive oil in a stainless steel or cast iron skillet over medium-high heat until shimmering.
- Place fillets skin-side down. Press gently with a spatula for the first 30 seconds to prevent curling.
- Cook skin-side down for 4–5 minutes without touching — the skin should release cleanly when it is ready.
- Flip and cook flesh-side down for 1–2 minutes more. Remove fillets to a plate.
- Reduce heat to medium. Add 3 tbsp olive oil to the same pan. Add garlic and cook 60 seconds until golden.
- Add capers and chili flakes. Cook 30 seconds. Remove from heat and add lemon juice and zest. Stir to combine.
- Spoon the sauce over the salmon. Finish with fresh dill or parsley.
Tips & Notes
- Completely dry skin is the only trick to achieving a crispy crust. Use paper towels and press firmly.
- Do not move the fish while the skin is cooking — trust the pan and wait for it to release naturally.
- Wild-caught salmon has more omega-3 fats and better flavour than farmed. Worth seeking out when available.
- Alpha-Gal note: all fish and olive oil are fully safe. Verify that capers are packed in brine, not lard (most commercial brands are fine).
