Beet kvass is one of the most ancient fermented tonics — earthy, tangy, slightly sweet, and deeply nourishing. Eastern European homesteaders drank a small glass each morning for digestion and liver health. It takes five minutes to set up and ferments itself in three days.
What You Need
- 2–3 medium beets, unpeeled, scrubbed and diced into 1-inch cubes (do not grate — too much sugar releases at once)
- 1 tsp non-iodized salt
- Filtered water to fill the jar
- Optional: a slice of lemon, a few peppercorns, fresh dill
Method
- Wash beets well. Do not peel — the wild bacteria live on the skin. Dice into 1-inch cubes.
- Place in a clean quart jar. Add salt.
- Fill with filtered water to within an inch of the top. Stir to distribute salt.
- Cover with a cloth. Leave at room temperature 2–3 days. Stir once or twice each day.
- It will become deep red-purple, slightly tangy, and earthy. Taste from day 2.
- Strain. Drink the liquid in small daily glasses (2–4 oz). Refrigerate.
- The beets can be re-fermented once more with fresh brine — then eat or compost them.
Tips & Notes
- Diced, not grated. Grating releases too much sugar at once and produces a slimy, overly sweet brew.
- Drink it cold, in small doses. An acquired taste at first — deeply satisfying once it becomes a habit.
