Real pickles — not vinegar pickles, but true lacto-fermented cucumbers preserved in brine. They are crunchy, genuinely sour, alive with probiotics, and complex in a way that vinegar pickles simply are not. Two ingredients. No canning. No heat.
What You Need
- 1 lb small pickling cucumbers (Kirby variety is best)
- Filtered water
- 1 tbsp non-iodized salt per 2 cups water (2.5% brine)
- 4–6 garlic cloves
- Fresh dill — heads and fronds
- ½ tsp black peppercorns
- ¼ tsp red pepper flakes (optional)
- Grape, oak, or horseradish leaf (optional — tannins keep pickles crisp)
Method
- Trim ⅛ inch off the blossom end of each cucumber (this end has enzymes that soften pickles).
- Make brine: dissolve salt in filtered water. Ratio is 1 tbsp salt per 2 cups water.
- Layer dill, garlic, peppercorns, and a grape or oak leaf in the bottom of a clean jar.
- Pack cucumbers in vertically as tightly as possible — they'll shrink.
- Pour brine to cover completely. Weigh cucumbers below the brine surface.
- Cover loosely. Ferment at room temperature 3–5 days, tasting daily from day 3.
- When pleasantly sour and garlicky, seal and refrigerate. They're done.
Tips & Notes
- The blossom end trim is essential — skip it and you'll get soft pickles.
- Tannin-rich leaves (grape, oak, horseradish, blackcurrant) keep the texture crunchy.
- Fermented pickles keep in the refrigerator for months.
