Real ginger beer brewed from a ginger bug — fiery, naturally fizzy, and alive with beneficial organisms. Nothing like the commercial ginger ale that pretends to be ginger beer. This has heat and depth. Brew a batch and you'll never go back.
What You Need
- 4 cups filtered water
- ¼ cup cane sugar
- 2 tbsp fresh ginger, grated
- Juice of 1 lemon
- ¼ cup active ginger bug liquid (strained)
Method
- Bring water to a simmer. Add sugar, grated ginger, and lemon juice. Stir until sugar dissolves.
- Cool completely to room temperature — hot liquid will kill the wild yeast in the ginger bug.
- Strain into a clean 1-quart swing-top bottle or mason jar with tight-fitting lid.
- Add ginger bug liquid. Seal tightly.
- Leave at room temperature for 2–3 days. Burp the bottle daily — release pressure slowly to avoid explosions.
- Refrigerate when pleasantly fizzy. Drink within 2 weeks.
Tips & Notes
- Use a plastic bottle as a pressure gauge — when the plastic bottle feels hard and drum-tight, it's ready.
- Increase ginger, reduce sugar for more heat and less sweetness.
- This is lightly alcoholic (0.5–1%) from fermentation — keep that in mind.
