A ginger bug is a wild-fermented starter made from fresh ginger, sugar, and water. It captures the wild yeast on the ginger skin and creates a naturally carbonated culture you can use to brew ginger beer, ginger ale, or fermented sodas. Think of it as sourdough starter for beverages.
What You Need
- 2 tbsp fresh ginger, grated (with skin — the yeast lives there)
- 2 tbsp cane sugar
- 2 cups filtered water
- Additional ginger and sugar for daily feedings
Method
- Combine grated ginger, sugar, and water in a clean pint jar. Stir vigorously to dissolve.
- Cover loosely with a cloth. Leave at room temperature.
- Each day for 5–7 days: add 1 tbsp fresh grated ginger and 1 tbsp sugar. Stir well twice a day.
- The bug is ready when it's bubbly, fizzy when you stir it, and smells pleasantly yeasty and gingery.
- Use ¼ cup of ginger bug per quart of sweetened tea or juice to brew naturally carbonated sodas.
Tips & Notes
- Organic ginger is ideal — the skin may have been treated on conventional ginger.
- Active ginger bug looks like a snow globe when you stir it — lots of visible bubbles rising.
- Store in the refrigerator once established, feeding once a week to maintain.
