Milk kefir is thicker, tangier, and more probiotic-rich than any yogurt. Made with live kefir grains — a symbiotic culture of bacteria and yeast — it ferments in 24 hours at room temperature. Once you have grains, it's free food for life.
What You Need
- 2 cups whole milk (raw or pasteurized — not ultra-pasteurized, which kills the grains)
- 1–2 tbsp live milk kefir grains
- A clean glass jar and a fine mesh strainer
Method
- Place kefir grains in a clean glass jar. Add milk. Stir gently.
- Cover with a cloth or loose lid. Leave at room temperature for 18–24 hours.
- It's ready when it has thickened and smells pleasantly tangy. In warmer weather it ferments faster.
- Pour through a fine mesh strainer, catching the grains. Bottle the kefir and refrigerate.
- Rinse grains gently with room-temperature filtered water. Transfer to a fresh jar of milk and repeat.
- Grains grow over time — share extras with other homesteaders.
Tips & Notes
- Kefir grains can last indefinitely with proper care. They can be refrigerated in milk for up to 2 weeks without feeding.
- Second ferment: bottle with fruit or vanilla and leave sealed at room temperature 12–24 hours for fizzy, flavored kefir.
- Use overfermented kefir (too sour) in baking or smoothies — nothing goes to waste.
