Soaking oats overnight in water with a splash of something acidic begins a light fermentation that breaks down phytic acid and makes the grain dramatically more nutritious. The texture becomes silkier too. This is how oats have been prepared for centuries.
What You Need
- 1 cup rolled oats
- 2 cups filtered water
- 1 tbsp raw apple cider vinegar or plain yogurt (activates the fermentation)
- Pinch of salt
- To serve: fresh fruit, maple syrup, mixed seeds, or nuts
Method
- Combine oats, water, and apple cider vinegar in a glass jar or bowl. Stir once. Cover loosely.
- Leave at room temperature for 8–12 hours. The oats will absorb the liquid and soften.
- In the morning, drain and give the oats a quick rinse.
- Add fresh water to cover and cook on the stovetop over medium heat for 3–5 minutes, stirring.
- Season with a pinch of salt. Top with fruit, seeds, or maple syrup.
Tips & Notes
- The overnight soak reduces phytic acid significantly — phytic acid binds minerals like iron and zinc and prevents absorption. Fermentation undoes that.
- The texture after fermenting is noticeably silkier and less gluey than un-soaked oats.
