No-bake energy balls — Medjool dates, mixed nuts, seeds, and raw cacao — that keep for weeks and eat like candy. Roll them in coconut or cacao for a finished look. Simple, deeply satisfying, and genuinely nourishing.
What You Need
- 1 cup pitted Medjool dates (soak 10 minutes in warm water if dry)
- 1 cup mixed nuts (almonds, walnuts, cashews)
- ¼ cup mixed seeds (sunflower, pumpkin, or hemp)
- 2 tbsp raw cacao powder
- 1 tbsp coconut oil
- Pinch of fine salt
- Shredded coconut or extra cacao for rolling
Method
- Process nuts and seeds in food processor until coarsely chopped.
- Add dates and cacao powder. Process until the mixture comes together and holds when pressed.
- Add coconut oil and salt. Pulse to combine.
- Roll into balls — about 1 tablespoon each.
- Roll in shredded coconut or extra cacao.
- Refrigerate 30 minutes to firm. Store refrigerated for 3 weeks or frozen for 3 months.
Tips & Notes
- Medjool dates are the best for this — they are soft and sticky enough to bind everything.
- The mixture should stick when you press it. If it doesn't, add one more date.
