No-cook jam that sets in 20 minutes. Chia seeds do the gelling work — no pectin, no refined sugar, no canning required. You control the sweetness, and it keeps the bright, fresh flavor of the fruit. Put it on everything.
What You Need
- 2 cups fresh or frozen blueberries
- 3 tbsp chia seeds
- 2 tbsp maple syrup (or to taste)
- 1 tsp fresh lemon juice
- Pinch of salt
Method
- Combine blueberries and maple syrup in a small saucepan. Heat over medium, mashing berries with a fork as they warm.
- Bring to a gentle simmer and cook for 5 minutes, stirring.
- Remove from heat. Stir in chia seeds, lemon juice, and salt.
- Stir again every few minutes as it cools — the chia is beginning to gel.
- Transfer to a jar. Refrigerate — the jam sets fully within 1 hour. It continues to thicken as it cools.
Tips & Notes
- Works with any berry — strawberry, raspberry, mixed berry. Exact same method.
- Keeps refrigerated for 2 weeks.
- The lemon juice is important — it brightens and preserves the color.
