Pesto without the parmesan — hemp seeds replace pine nuts and add a complete plant protein. Bright, herby, and deeply satisfying. Toss it with pasta, spread it on toast, or drizzle it over roasted vegetables. Ready in ten minutes.
What You Need
- 2 cups fresh basil, tightly packed
- ½ cup hemp seeds
- 3 garlic cloves
- Juice of ½ lemon
- ½ cup good extra-virgin olive oil
- Coarse salt and black pepper
Method
- Combine basil, hemp seeds, and garlic in a food processor. Pulse to a rough paste.
- With the motor running, drizzle in olive oil slowly until smooth and emulsified.
- Add lemon juice. Season generously.
- Taste — adjust lemon, salt, or garlic as needed.
- Transfer to a jar. Press plastic wrap to the surface to prevent browning.
Tips & Notes
- Keeps refrigerated 5 days, frozen for months.
- Hemp seeds have a mild, nutty flavor — more neutral than pine nuts and much cheaper.
