The simplest, most honest carnivore meal. Ground beef seasoned and seared until deeply browned, topped with a fried egg and a knob of butter. Ready in ten minutes. More satisfying than almost anything.
What You Need
- ½ lb (80/20) ground beef per person
- Coarse salt and black pepper
- Garlic powder
- 1 egg per person
- 1 tbsp butter or tallow
Method
- Heat a cast iron pan over medium-high until very hot. Add fat.
- Add ground beef, pressing flat into the pan. Season generously.
- Do not stir — let it sit and form a crust for 3–4 minutes.
- Break apart and continue cooking until deeply browned throughout. Season again.
- Push to the side. Add butter and fry egg to your preference.
- Serve beef in a bowl, egg on top, extra butter pooled around it.
Tips & Notes
- 80/20 ground beef is important — the fat carries the flavor. Extra-lean is dry and bland here.
- This is a meal that rewards high heat and patience. Let the crust form before you touch it.
