Tallow is the foundation of traditional cooking — shelf-stable, clean-burning, deeply nourishing. Render it yourself from suet or fat trimmings. It costs almost nothing and keeps for months without refrigeration.
What You Need
- 2 lbs beef suet (kidney fat) or beef fat trimmings — ask your butcher
- ¼ cup water
- Pinch of salt
Method
- Cut fat into 1-inch chunks or grind if possible — smaller pieces render faster and more completely.
- Place in a heavy-bottomed pot with a splash of water. This prevents scorching at the start.
- Cook over the lowest possible heat, stirring occasionally, for 2–4 hours. The fat will slowly melt and render.
- When the solid bits (cracklings) turn golden and stop releasing liquid, the rendering is complete.
- Pour liquid through cheesecloth into clean glass jars. It will be golden-yellow when warm, white and firm when cold.
- Store sealed at room temperature for 1 month, refrigerator for 1 year.
Tips & Notes
- The strained cracklings are delicious salted as a snack. Don't waste them.
- Kidney fat (suet) produces the purest, most neutral tallow. Fat trimmings work but are fattier.
- Use tallow for searing meat, roasting vegetables, and frying eggs.
