Lamb shoulder is forgiving, fatty, and deeply flavorful. Braise it whole until it falls from the bone into rich, silky shreds. This is the kind of dish that gets better overnight — make it the day before.
What You Need
- 3–4 lb bone-in lamb shoulder
- Coarse salt and black pepper
- 2 tbsp lard or beef tallow
- 1 onion, roughly chopped
- 6 garlic cloves
- 1 cup lamb or beef bone broth
- 1 tbsp apple cider vinegar
- Fresh rosemary, thyme, and bay leaves
Method
- Season lamb generously with salt and pepper, pressing seasoning into any crevices.
- Brown in hot fat on all sides in a Dutch oven until deep, even mahogany color — do not skip this.
- Remove lamb. Cook onion and garlic in the same pot until softened.
- Return lamb. Add broth, vinegar, and herbs. Cover tightly with a lid.
- Cook at 325°F for 3–4 hours until fork-tender and falling from the bone.
- Rest 20 minutes. Shred directly in the braising liquid or serve in large pieces.
Tips & Notes
- Lamb shoulder over leg every time — the extra marbling and fat is what makes this fall apart.
- Refrigerate overnight and reheat the next day. The flavor deepens considerably.
