Liver is one of the most nutrient-dense foods on earth — more iron, B12, and folate than almost anything else. Soaked briefly and cooked with sweet caramelized onions, even skeptics eat this happily. This is ancestral nutrition.
What You Need
- 1 lb beef liver, sliced ½ inch thick
- 1 cup whole milk (for soaking — removes bitterness)
- 2 large onions, thinly sliced
- 3 tbsp butter or beef tallow
- Coarse salt and black pepper
- Fresh thyme
- 1 tbsp apple cider vinegar
Method
- Soak liver slices in milk for 30–60 minutes. This draws out bitterness and makes the flavor much milder.
- Melt 2 tbsp fat in a heavy skillet over medium-low heat. Add onions and cook slowly, stirring occasionally, for 25–30 minutes until deeply golden and sweet.
- Push onions to the side. Raise heat to medium-high. Pat liver completely dry and season with salt, pepper, and thyme.
- Add remaining fat. Sear liver 2–3 minutes per side until browned outside but still pink inside. Do not overcook — grey liver is ruined liver.
- Splash the vinegar in at the last moment and let it sizzle. Serve topped with caramelized onions.
Tips & Notes
- Pink inside is perfect. Grey throughout means overcooked and grainy — pull it early.
- 2–3 minutes per side for ½-inch slices is almost always right. Use a timer.
- Start with beef liver from pasture-raised animals — the flavor is noticeably better.
