Butternut Apple Curry Soup

Time: 1 hour 30 minutes · Difficulty: Easy · Season: Autumn / Winter

Roasted butternut squash and sweet apple blended with warm curry spices and finished with a swirl of cream. Silky, warming and deeply flavoured — a perfect autumn and winter soup. By Janet.

What You Need

Method

  1. Preheat oven to 425°F (218°C).
  2. Cut the squash in half lengthwise and scoop out the seeds and pulp. Cut the apples in half and core them.
  3. Coat the squash and apple halves all over with olive oil and a good pinch of pink salt. Place flesh-side down on a baking sheet.
  4. Roast for 45 minutes to 1 hour until the flesh is completely soft and caramelised at the edges.
  5. Allow to cool slightly, then scoop the cooked squash and apple flesh away from their skins. Transfer to a large stock pot.
  6. Add the chicken or vegetable stock and all the spices: cinnamon, ginger, turmeric, curry powder, garlic powder, paprika, cumin, cayenne and raw sugar.
  7. Bring to the boil, then reduce to a gentle simmer and cook for 30 minutes to marry the flavours.
  8. Use an immersion (stick) blender directly in the pot and blend until completely smooth.
  9. Stir in the heavy cream and blend again briefly until silky. Taste and adjust salt, pepper or spice.
  10. Serve hot. Swirl a little extra cream on top and add a pinch of paprika or a few pumpkin seeds if you like.
