Fresh ricotta takes about 30 minutes and three ingredients. The result is silky, mild, and nothing like the grainy commercial version. Use it in pasta, on toast with honey, in desserts, or just eat it with a spoon.
What You Need
- 1 gallon whole milk (not ultra-pasteurized)
- 1 teaspoon fine sea salt
- ¼ cup white wine vinegar or fresh lemon juice
Method
- Pour milk and salt into a heavy pot. Heat over medium, stirring occasionally, until it reaches 185°F — you will see steam and small bubbles around the edges. Do not boil.
- Remove from heat. Add vinegar or lemon juice slowly, stirring gently once or twice.
- Let sit undisturbed for 10–15 minutes. Curds will form and separate from the whey.
- Line a colander with cheesecloth or a clean thin linen towel.
- Gently ladle the curds into the colander. Do not pour — pouring breaks the curds.
- Let drain 20–60 minutes depending on desired texture. (20 min = creamy, 60 min = firmer)
- Transfer to a container. Refrigerate up to 5 days.
Tips & Notes
- Save the whey. Use it to make bread, cook grains, or feed plants — it's full of minerals and protein.
- Add herbs, garlic, or lemon zest while still warm.
